Chocolate Peppermint Sandwich Cookies

There are few things in life that make me quite as happy as delicious sweet treats. (Although admittedly, fine letterpress, dogs and a fresh pack of Pilot G2-05 pens rank right up there.) The only person I know who can rival my love for sweets is my husband who is addicted to cookies specifically. In fact, we even gave cute boxes of homemade cookies away as favors at our wedding this past July. Accordingly, the holidays become a great time of fun for me as I play with new recipes and continue perfecting old favorites. These chocolate peppermint sandwich cookies from Joy the Baker are currently topping my list of must-try cookies this holiday season. They basically had me at “chocolate peppermint” if you know what I mean. I might just whip up a batch of these over the weekend and I’ll be sure to let you know how they turn out. Anyone else planning to get their cookie baking on this weekend?

Like I said, Mr. loved them! And it's totally possible that I just completely messed them up :) The butter was the only thing holding all the dry stuff together so perhaps you can substitute something else in? .-= juel's most recent blog post: Our Wedding Monogram! =-.

Ok yeah, just made them and totally bummed that they took so long and I'm not a fan. My cookies turned out really really buttery (I know, that's like all that's in them) and maybe it's a good thing but I don't really want to eat more than one...OOH, would taste fabulous with some ice cream!! .-= juel's most recent blog post: Regis, can I use a lifeline? =-.

Ohhhh what a bummer, Juel! Although your comment did keep me from wasting time making them myself. Do you think they'd be salvageable if I adjusted the butter content when making the dough?
