Boozy Bunny Jiggler Shots

- 2 cups dry rosé
- ½ cup strawberry simple syrup
- ½ cup raspberry vodka
- 3 packets plain gelatin
- 2 drops pink food coloring (optional)
- 1 cup white sugar
- 1 cup water
- 2 cups strawberries, hulled and halved
- White nonpareil sprinkles (optional)
- Pour rosé and simple syrup in a cool saucepan
- Sprinkle gelatin over top and allow it to sit for 3 - 5 before heating
- Turn the heat to medium-high and bring to a simmer, mixing to incorporate the gelatin
- Continue to heat until the gelatin is fully dissolved being careful not to let the mixture boil
- Pour rosé gelatin mixture into a large heat-safe measuring cup
- Add vodka and food coloring and gently stir
- Pour into a lightly greased silicone mold and refrigerate for four hours or overnight
- Use a bamboo skewer or similar to gently outline the shape of each jiggler bunny, to help it remove easier from the mold
- Finally, create a face for the bunny using three white nonpareil sprinkles for eyes and a nose
- Add sugar and water to a saucepan and boil over medium-high heat until sugar is dissolved
- Add strawberries and continue to boil at a low boil for 12 - 15 minutes being careful not to let it bubble over
- Remove from the heat and strain through a sieve into a bowl or similar
- Use the back of a spatula or wooden spoon to push as much of the juice through the sieve as possible, then toss the remaining mushed up berries
- Allow the syrup to cool completely before using
