Easy Pickled Red Onions

- 2 medium to large red onions
- 2 cups warm water
- 1 cup organic apple cider vinegar
- ⅛ cup granulated sugar
- 1 tablespoon Kosher salt
- Thinly slice onions diametrically, then separate the rings of onion and place in a large jar
- Combine water, apple cider vinegar, sugar and salt in a small mixing bowl. Whisk until salt and sugar are dissolved.
- Pour water and vinegar mixture over the onions and close the jar tightly
- Refrigerate for 3 hours or overnight
