Remember the bad rap that brussels sprouts used to have? They were often served mushy, overcooked and therefore tangy and bitter. It turns out, we were cooking them wrong all along! This easy oven roasted brussels sprouts recipes will make a believer out of just about anyone and they’re so simple to make!

This is my go-to basic method for making roasted brussels sprouts. There are very few, very accessible ingredients and then sometimes I shake it up by adding big cloves of garlic and roasting those right along with the brussels sprouts and either wedges of onion or thinly sliced shallots. 

For today I wanted to share how I simply and quickly make my basic, crowd favorite roasted brussels sprouts. I love eating thees all year long! They are equally as delicious in the winter served up with heartier dishes or in the summer alongside whatever you are pulling off the grill.

Easy Oven Roasted Brussels Sprouts Ingredients

  • Brussels sprouts – Fresh brussels sprouts that are fully cleaned, rinsed and patted dry. You could make this recipe with frozen brussels sprouts, but fresh ones are easy to find and impart a far more flavorful dish.
  • Olive oil – Extra virgin or light olive oil – either option works for these brussels sprouts.
  • Balsamic vinegar – You don’t need a ton of balsamic vinegar for roasted brussels sprouts, but it adds a nice depth of flavor that I think is very nice with this recipe. You can technically skip the balsamic if you don’t have it on hand and they’ll still be delicious!
  • Sea salt – This is the kind of dish where a great salt makes a difference – sea salt or pink Himalayan sea salt works nicely.
  • Black pepper – I default to freshly cracked black pepper, but any black pepper will do.
  • Lemon – I prefer to roast a fresh lemon with the brussels sprouts to bring out all the intense flavor of the juice.

1. Begin by slicing the brussels sprouts in half lengthwise. If I have particularly large brussels sprouts I may even quarter them lengthwise so they roast nicely. If the ends are particularly stalky I will also trim off just the very end of each brussels sprout.

2. Place the brussels sprouts in a mixing bowl and drizzle with olive oil. I use extra virgin, light or traditional olive oil depending on  my mood. All of them work equally as well! Extra virgin olive oil with generally add a bit more flavor to a dish as it tends to be a more flavorful oil.

3. Season with sea salt and cracked black pepper. In most recipes I suggest seasoning to taste, because everyone has a different palate and I definitely recommend that as well here. I love a good coarse ground sea salt, but any sea salt will work for your roasted brussels sprouts.

4. Drizzle with balsamic vinegar and then toss well to combine. As mentioned above, these sprouts don’t end up featuring loads of balsamic flavor, but it adds a nice depth that really brings out all the flavors so nicely.

5. Slice a lemon in half, then transfer the prepared brussels sprouts to a sheet pan lined with parchment paper for easy clean up. Place the lemon onto the sheet pan along with the sprouts so that it can also roast up.

6. Roast in the oven for 20 to 25 minutes at 350° until soft and slightly golden and a bit of crispiness to the edges. I then like to turn on the broiler for a few minutes to add to the light, crispy texture.

Carefully remove the sheet pan from the oven and use an oven mitt or a pair of tongs to carefully squeeze the roasted lemon over top of the brussels sprouts. (Be careful because the lemon juice will be hot!) Toss to combine and they’re all done!

How to Cook Brussels Sprouts:

While this brussels sprouts recipes in made in the oven, there are other great, easy way to cook brussels sprouts. Here are a few ways to adapt this recipe:

  1. How to Grill Brussels Sprouts: Prepare the ingredients the same way and place in a grill safe pan or baking tray. Cook over direct medium heat, tossing frequently until tender and slightly crispy. Alternately, you can skewer prepared brussels sprouts and cook directly on the grill rack over medium heat, rotating ften until done. 
  2. How to Sautée Brussels Sprouts: Similarly, you could use these ingredients to sautée brussels sprouts. Heat a heavy bottom skillet, such as a cast iron skillet, over medium high heat for a few minutes. Add the prepared brussels sprouts and cook for 5 minutes, then toss to turn and continue in this fashion until done, about 15 – 20 minutes.
  3. How to Air Fry Brussls Sprouts: Place prepared brussels sprouts in an air fryer and air fry at 375° for about 15 minutes, stopping to toss them once to turn about halfway through.

Notes

In most recipes I suggest seasoning to taste, because everyone has a different palate and I definitely recommend that here. I love a good coarse ground sea salt, but any sea salt will work for your roasted brussels sprouts.

You can use any olive oil for this recipe including extra virgin and light olive oil.

I used to think I didn't like Brussels sprouts until I had them roasted. What a game changer. I've never tried balsamic vinegar on them but it sounds amazing. Adding that in next time for sure.
