Has anyone figured out where 2018 is flying off to yet? How on earth are we already heading into Memorial Day weekend?! I’d make some sort of vague complaints about how life is just moving too fast, but frankly, I love this time of year best of all and my sister flies home in a few days for the long weekend sooo, I got nothing. (This is where I would enter one of those quizzical little shrug emojis I love so much in text messages if such things were acceptable in long form.) With Memorial Day, comes picnic season and with picnic season comes an uptick in entertaining and the need for crowd-wowing but easy dessert recipes. That’s exactly where this brownie pizza recipe comes into play, friends! It’s relatively easy to make, it’s insanely pretty (without requiring any fancy decorating skills, which I don’t have) and it’s topped with the most delicious strawberry buttercream frosting. That’s what we call all the wins!

The basis of this whole sensational concoction is effectively a giant brownie. Others will vehemently disagree with me, but I think most of the best brownies come from a box (almost my exact opposite thought on cake, for the record), so that’s what we’re using here. You’ll need two box mixes and a large round cake pan to make this work. For the cake pan, ten or twelve inches is ideal. Prepare the mixes according to the box instructions and then make the frosting, which is honestly the real star of the show here. The frosting does take a little bit of work, but the entire process is super simple so don’t be intimidated! These kinds of tricks (like simplifying your life with a box mix, but adding a seriously delicious homemade frosting) make the whole process so much less fussy, but no less of a hit with your family and friends, which I’m personally all about!

Berry Brownie Pizza with Strawberry Buttercream Frosting

Ingredients
For the Brownie Pizza
  • Two packages of dark chocolate brownie mix
  • Water, eggs, oil (etc) as specified by the mix
  • ½ cup sliced strawberries
  • ½ cup fresh whole blueberries
  • ½ cup fresh whole raspberries
  • ½ cup fresh whole blackberries
For the Strawberry Buttercream Frosting
  • 2 cups fresh strawberries, chopped
  • 3 tablespoons granulated sugar
  • 4 ounces (1/2 cup) unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 3 cups confectioner’s sugar, sifted
  • 1 teaspoon vanilla extract
  • 3 tablespoons all purpose flour
Instructions
For the Brownie Pizza
  1. Preheat oven to 350° then prepare brownie mix according to package instructions in a large mixing bowl
  2. Pour brownie batter into a very well greased 10 or 12" round cake pan (I used non-stick baking spray)
  3. Bake for 25 - 35 minutes, or until a toothpick inserted in the center comes out clean (NOTE: Baking times will vary based on the exact size of your pan)
  4. Remove from the oven and allow to cool for 2 - 3 minutes
  5. Use a butter knife to gently loosen the edges then carefully tip brownie out in one piece onto a cooling rack
  6. Once completely cool, transfer to a cutting board or serving board
  7. Top with a thick layer strawberry buttercream frosting, then add strawberries, blueberries, blackberries and raspberries
  8. Slice and serve immediately. Refrigerate to store in warmer weather
For the Strawberry Buttercream Frosting
  1. Toss chopped strawberries and sugar in a small bowl and set aside and allow strawberries to juice for 1 - 2 hours
  2. Transfer berries and juice to a blender or food processor and blend until smooth
  3. Strain through a sieve (to remove seeds and pulp) into a small saucepan
  4. Heat over medium-high heat and simmer for 15 - 20 minutes, occasionally skimming the foam off the top
  5. Once thick and reduced down by about half, remove from the heat and allow to cool completely
  6. In the bowl of a stand mixer, cream together the softened butter and cream cheese, scraping down the sides of the bowl occasionally
  7. Add the cooled strawberry sauce and vanilla and mix again until well combined and completely smooth
  8. Begin add the sifted confectioner's sugar, ⅓ at a time, mixing well between each addition
  9. Finally, add the flour and mix again, to thicken slightly
