Happy Monday, friends! I’m working on getting back in the saddle following a little spring break adventure over the second half of last week. There’s a really funny story there about a toddler who refused to sleep and cried for seven hours in a car only to then hate living in a hotel, but we’re going to save that one until I’ve recovered a bit more. Ha! In the meantime, let’s talk about these breakfast pastries. Because it’s Monday and by Monday I’m already thinking about weekend brunch.
Spring
When I started making chocolate bark (first Halloween candy bark and then Christmas chocolate bark), I was pretty sure I’d started something I wasn’t going to be able quit. Fast forward a few months, dump bags of my favorite Cadbury Mini Eggs on every store shelf and, well, I was right! This, friends, is Easter candy bark.
Rumor has it that spring is just a couple of weeks out, although truth is we typically don’t see real spring until at least April here in our neck of the woods in the northeast. Even though it has been about 15° every day so far this week (actually not an exaggeration), I am definitely starting to get that spring itch. The one where I want to throw open the windows, scrub every last inch of the house, spend an afternoon arranging plants in little pots, painting a room a fresh new color, changing out all the linens and generally just freshening things up. Basically, I’ve got spring fever.
I’m still over here wrapping my head around the fact that Easter is so early this year and boom! It’s here already. Time for a good mimosa recipe, am I right? Most years we have Easter dinner at my father’s house, which we’ll be doing again this year. My dad is always good for pulling out a great bottle of wine to serve with holiday dinners, but personally I’m all about a fabulous mimosa recipe on Easter. (See: Mimosa popsicles for the win.)
